What do you mean by desktop mode? Browsing desktop versions of websites? Dolphin HD has served me well for browsing desktop websites when it comes to porn lol It's the whole reason I got it because the Gingerbread browser on my Galaxy SII was mobile only, until 4.0.3 when it got a desktop option.

did you try the debug trick?

type about:debug in the address and hit enter. Then go to the browsers settings, and you should have a UAstring setting.
